1 pound thinly sliced ribeye steak

1 tablespoon olive oil

1 medium onion, thinly sliced

1 medium green bell pepper, thinly sliced

1 teaspoon garlic powder

Salt and pepper to taste

8 slider rolls (preferably soft and slightly sweet)

8 slices provolone cheese

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish)

Prepare the Meat: Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced ribeye steak and season it with salt, pepper, and garlic powder. Cook until just browned, about 2-3 minutes. Avoid overcrowding the pan to ensure even cooking.

    Sauté Vegetables: Add the sliced onion and bell pepper to the same skillet. Sauté for another 3-5 minutes, or until the vegetables are soft and caramelized. Stir occasionally to prevent burning.

      Melt the Cheese: Reduce the heat to low. Layer the provolone cheese over the cooked steak and vegetables. Cover the skillet with a lid to help melt the cheese, approximately 2-3 minutes.

        Prepare the Slider Rolls: While the cheese is melting, split the slider rolls in half. Toast them lightly on a griddle or in the oven to get them warm and slightly crispy.

          Assemble the Sliders: Spread a thin layer of mayonnaise and Dijon mustard on the bottom half of each slider roll. Generously spoon the steak, onion, and bell pepper mixture onto the rolls, and top each with the melted provolone cheese.

            Finish the Sliders: Place the top half of each slider roll on top. If desired, secure each slider with a toothpick for easy serving.

              Optional Broil Step: For an extra crunch, you can place the assembled sliders on a baking sheet and put them under the broiler for about 2-3 minutes, just until the tops are golden.
