1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

2 (8 oz) packages cream cheese, softened

¾ cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

¼ cup powdered sugar

1 tablespoon lemon juice

Prepare the Crust: Preheat your oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well blended. Press this mixture evenly into the bottom of a greased 9x9 inch baking pan to form the crust.

    Bake the Crust: Bake the crust in the preheated oven for 8-10 minutes or until lightly browned. Remove from the oven and let it cool while you prepare the filling.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add granulated sugar and continue mixing for about 2 minutes.

        Add Vanilla and Eggs: Add the vanilla extract and one egg at a time into the cream cheese mixture, mixing well between each addition. Be careful not to over-mix.

          Incorporate Sour Cream: Stir in sour cream, powdered sugar, and lemon juice until well combined and smooth. Ensure there are no lumps.
