Ingredients

2 cups fresh basil leaves

1/2 cup pine nuts (or walnuts)

2 cloves garlic, peeled

3/4 cup grated Parmesan cheese

1/2 cup extra-virgin olive oil

Juice of 1 lemon

Salt and pepper to taste

Instructions

Prep the Basil: Rinse the basil leaves under cold water and pat them dry with a clean towel. This will ensure your pesto has a fresh taste without any grit.

Toast the Nuts: In a small dry skillet over medium heat, add the pine nuts (or walnuts) and toast them until they are golden brown and fragrant, about 3-5 minutes. Stir frequently to avoid burning.

Blend the Ingredients: In a food processor, combine the toasted nuts, basil leaves, garlic, and Parmesan cheese. Pulse until the mixture is finely ground.

Add Lemon Juice and Olive Oil: While the food processor is running, slowly drizzle in the olive oil until the pesto reaches your desired consistency. Then add the lemon juice and pulse a few more times to combine.

Season to Taste: Stop the processor and scrape down the sides. Taste the pesto and season with salt and pepper to your liking. Blend again briefly to incorporate.

Serve or Store: Use your pesto immediately as a sauce with pasta, a spread on sandwiches, or as a dip. If storing, transfer it to an airtight container, cover the surface with a thin layer of olive oil to prevent browning, and refrigerate.
