2 medium carrots (cenoura), grated

1 red bell pepper, diced

¼ cup red onion, finely chopped

2 tablespoons fresh mint leaves, chopped

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey (or agave syrup for vegan option)

Salt and black pepper to taste

Optional: 1 tablespoon sesame seeds for garnish

Instructions
 

First, prepare the vegetables: wash the cucumber and carrots thoroughly. Slice the cucumber into thin rounds and grate the carrots using a box grater or a food processor.

    In a large mixing bowl, combine the sliced cucumber, grated carrots, diced bell pepper, and chopped red onion.

      In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and black pepper to create a dressing. Mix well until combined.

        Pour the dressing over the vegetable mixture and gently toss everything together until all the vegetables are coated with the dressing.
