1 lb ground beef

1 medium onion, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

4 slices Swiss cheese (or your favorite cheese)

4 slices of rye bread (or sourdough)

2 tablespoons Dijon mustard

Fresh arugula or spinach for garnish (optional)

Instructions
 

In a skillet over medium heat, melt the butter and olive oil together. Add the sliced onion, stirring frequently until they become soft and caramelized, about 15-20 minutes. Season with salt and pepper. Set aside.

    While the onions are cooking, season the ground beef with garlic powder, salt, and pepper. Divide the beef into 4 equal portions and form into patties, ensuring they are slightly larger than the bread since they will shrink as they cook.

      In a separate skillet over medium-high heat, cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness. During the last minute of cooking, place a slice of cheese on each patty and cover the skillet to melt the cheese.

        While the cheese melts, toast the rye bread slices on another skillet until golden brown, about 1-2 minutes on each side.

          Once the cheese has melted and the bread is toasted, assemble the patty melt by spreading Dijon mustard on one side of each slice of toasted bread. Place a cheesy patty on the mustard side, add a generous helping of caramelized onions on top, and finish with another slice of toasted bread, mustard-side down.

            Optional: Return the assembled patty melts to the skillet for 1-2 minutes per side to crisp up the bread if desired.

              Cut the melts in half and serve immediately, garnished with fresh arugula or spinach if using.
