Ingredients
  

8 oz (225 g) pasta of your choice (farfalle or penne work well)

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

8 oz (225 g) mushrooms, sliced (cremini or button)

5 oz (140 g) fresh spinach, roughly chopped

1 teaspoon dried Italian herbs (oregano, thyme, basil)

1/2 teaspoon crushed red pepper flakes (optional)

1/2 cup (120 ml) vegetable or chicken broth

1/2 cup (120 ml) heavy cream

1 cup (100 g) grated Parmesan cheese, plus extra for serving

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to the package instructions until al dente. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes or until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.

        Add Greens and Seasonings: Stir in the chopped spinach, dried Italian herbs, and crushed red pepper flakes (if using). Cook until the spinach wilts, about 2-3 minutes.

          Create the Sauce: Pour in the vegetable or chicken broth and bring to a simmer. Reduce the heat slightly, then stir in the heavy cream. Allow it to bubble gently for 2-3 minutes until the sauce thickens slightly.

            Combine and Cheese It Up: Add the cooked pasta to the skillet and toss to combine with the sauce. Stir in the grated Parmesan cheese, mixing well until it melts and coats the pasta. Season with salt and pepper to taste.

              Serve: Plate the pasta skillet and garnish with extra Parmesan cheese and chopped fresh parsley. Enjoy your delicious dish!
