1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup granulated sugar

1 large egg

1 cup milk

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1/2 cup chocolate chips (or blueberries, if preferred)

Maple syrup for drizzling

Preheat your oven to 350°F (175°C) and grease a mini muffin tin or use silicone mini muffin liners.

    In a large mixing bowl, combine the flour, baking powder, salt, and sugar. Whisk until evenly mixed.

      In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract until well combined.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; the batter should be slightly lumpy.

          Fold in the chocolate chips or blueberries, if using, until evenly distributed throughout the batter.

            Using a spoon or small ice cream scoop, fill each mini muffin cup about 2/3 full with batter.

              Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Once baked, remove the mini muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
