2 salmon fillets (6 ounces each)

Salt and pepper to taste

1 tablespoon olive oil

2 cups fresh spinach, washed and trimmed

2 cloves garlic, minced

½ cup heavy cream

¼ cup grated Parmesan cheese

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Fresh parsley, chopped (for garnish)

Season the Salmon: Pat dry the salmon fillets with paper towels. Season both sides generously with salt and pepper.

    Heat the Oil: In a large skillet, heat the olive oil over medium-high heat until shimmering.

      Sear the Salmon: Carefully place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes until the skin is crispy and golden. Flip and cook for an additional 3-4 minutes, or until the salmon is cooked through. Transfer the salmon to a plate and cover to keep warm.

        Sauté the Spinach: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach, stirring until wilted, about 2-3 minutes.

          Prepare the Cream Sauce: Lower the heat and pour in the heavy cream. Stir in the Parmesan cheese, lemon juice, and Dijon mustard. Allow the sauce to simmer gently, stirring continuously, until slightly thickened, about 3-4 minutes.

            Combine and Serve: Return the salmon to the skillet to coat with the sauce, cooking for an additional minute. Adjust seasoning with salt and pepper if needed.

              Plate the Dish: On each plate, place a generous serving of the spinach cream sauce and top it with a salmon fillet.
