8 oz rice noodles

2 tablespoons vegetable oil

2 cloves garlic, minced

1 small onion, thinly sliced

1 carrot, julienned

1 red bell pepper, sliced

1 cup bean sprouts

3 green onions, chopped

2 large eggs

1 cup cooked chicken, shrimp, or tofu (for a vegetarian option)

4 tablespoons fish sauce (or soy sauce for a vegan version)

2 tablespoons tamarind paste

2 tablespoons brown sugar

1 tablespoon sriracha (adjust for heat preference)

Crushed peanuts, for garnish

Lime wedges, for serving

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Noodles: In a large pot of boiling water, cook the rice noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Sauté Aromatics: In a large skillet or wok, heat the vegetable oil over medium heat. Add the garlic and onion, sautéing until fragrant and translucent (about 2-3 minutes).

      Add Vegetables: Toss in the julienned carrot and red bell pepper. Stir-fry for another 3-4 minutes until they start to soften but retain some crunch.

        Cook Protein: Move the vegetables to the side of the skillet and crack the eggs into the pan, scrambling them until fully cooked. Incorporate your choice of protein (chicken, shrimp, or tofu) and mix everything together.

          Combine Ingredients: Add the drained noodles back into the skillet. Pour in the fish sauce, tamarind paste, brown sugar, and sriracha. Toss everything together, ensuring the noodles are evenly coated with the sauce and heated through (about 3-4 minutes). Add in the bean sprouts and half of the green onions, mixing just until the sprouts are warmed.

            Serve: Plate the Pad Thai, garnishing with crushed peanuts, the remaining green onions, and fresh cilantro if using. Serve with lime wedges on the side for an extra splash of flavor.
