4 boneless, skinless chicken breasts

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 tablespoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 large eggs

1/4 cup whole wheat flour

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    In a shallow bowl, mix the panko breadcrumbs, grated Parmesan cheese, dried Italian herbs, garlic powder, onion powder, salt, and pepper. Set aside.

      Set up a breading station: In the first bowl, place the whole wheat flour. In the second bowl, beat the eggs.

        Take each chicken breast, and first coat it lightly in flour, shaking off the excess.

          Dip the floured chicken into the beaten eggs, ensuring it’s completely coated.

            Finally, roll the chicken in the breadcrumb mixture, pressing gently to adhere the crumbs firmly to the chicken.

              Place the coated chicken breasts on the prepared baking sheet. Drizzle the olive oil evenly over each piece to create a crispy crust.

                Bake in the preheated oven for 25–30 minutes, or until the chicken is cooked through and the crust is golden and crispy. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

                  Once done, remove from the oven and let the chicken rest for a few minutes before serving.
