1 lb (450g) chicken breast, cut into bite-sized pieces

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

2 tablespoons Dijon mustard

1 tablespoon honey

Cooking spray (or olive oil for drizzling)

Fresh parsley, chopped (for garnish)

Preheat your Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly coat the parchment with cooking spray for easy cleanup.

    Prepare the Breading: In a mixing bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and black pepper. Mix well to evenly distribute the seasoning.

      Prepare the Chicken: In another bowl, whisk together the eggs, Dijon mustard, and honey until smooth.

        Coat the Chicken: Dip each piece of chicken into the egg mixture, ensuring it's fully coated, then immediately roll it in the breadcrumb mixture, pressing lightly to adhere the crumbs to the chicken.
