Ingredients
  

5 medium russet potatoes, peeled and diced

1 small onion, diced

2 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon, crumbled

1/4 cup green onions, sliced

2 tablespoons butter

Salt and pepper to taste

Instructions
 

In a large pot, melt the butter over medium heat. Add the diced onions and sauté until they become translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and let simmer for about 20 minutes, or until the potatoes are tender.

        Use an immersion blender to puree the soup to your desired consistency (you can leave some chunks for texture, if preferred) or transfer to a regular blender in batches and blend until smooth.

          Return the blended soup to the pot over low heat and stir in the heavy cream. Allow it to heat through, about 5 more minutes.

            Add in the shredded cheese, stirring until melted and fully incorporated.

              Season with salt and pepper to taste.

                Serve hot, topped with crumbled bacon, sliced green onions, and extra cheddar cheese if desired.
