2 salmon fillets (6 oz each)

1 cup orzo pasta

2 cups vegetable or chicken broth

1 medium shallot, finely chopped

2 garlic cloves, minced

1 lemon (zested and juiced)

1 cup cherry tomatoes, halved

1 cup baby spinach

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Salmon: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the salmon fillets on both sides with salt, pepper, and dried oregano. Place the salmon in the skillet, skin-side down, and sear for 4-5 minutes until the skin is crispy. Carefully flip the salmon and cook for an additional 2-3 minutes until just cooked through. Remove the salmon from the skillet and set aside.

    Sauté Aromatics: In the same skillet, add another tablespoon of olive oil if needed. Add the chopped shallot and sauté for about 2 minutes until translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.

      Cook the Orzo: Add the orzo to the skillet, stirring to combine with the shallots and garlic. Pour in the vegetable or chicken broth, lemon juice, and zest. Bring the mixture to a gentle boil, then reduce the heat to a simmer. Allow the orzo to cook for about 8-10 minutes, stirring occasionally, until the pasta is tender and has absorbed most of the liquid.

        Add Veggies: Stir in the halved cherry tomatoes and baby spinach, allowing them to wilt in the heat. Season with additional salt and pepper to taste.

          Return Salmon: Gently nestle the seared salmon fillets back into the skillet on top of the orzo. Cover and cook for another 2 minutes to heat everything through and meld the flavors.

            Serve: Garnish the dish with fresh parsley and serve immediately, making sure to spoon some orzo and veggies alongside each salmon fillet.
