12 oz spaghetti

1 lb ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 can (14.5 oz) diced tomatoes (with juices)

1 can (10 oz) diced tomatoes with green chilies

4 cups chicken or beef broth

1 cup corn (frozen or fresh)

1 cup black beans, drained and rinsed

1 cup shredded cheddar cheese

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Sour cream, for serving (optional)

Lime wedges, for serving (optional)

Instructions
 

Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 3-4 minutes, until softened.

    Cook the Beef and Garlic: Add the ground beef or turkey to the pot, breaking it up as it cooks. Stir in the minced garlic and cook for an additional 2-3 minutes, until the meat is browned and no pink remains.

      Add Seasoning: Sprinkle in the taco seasoning and stir to coat the meat and onions evenly.

        Combine Ingredients: Pour in the diced tomatoes (with their juices), diced tomatoes with green chilies, broth, corn, black beans, and spaghetti. Stir everything together to ensure the pasta is submerged in the liquid.

          Cook the Pasta: Bring the mixture to a boil, then reduce the heat to medium-low. Cover the pot and let it simmer for about 10-12 minutes, or until the spaghetti is cooked al dente, stirring occasionally to prevent sticking.

            Add Cheese: Once the pasta is cooked, remove the pot from heat. Stir in the shredded cheddar cheese until melted and creamy. If desired, season with salt and pepper to taste.
