12 oz smoked sausage (such as kielbasa), sliced

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 can (14.5 oz) diced tomatoes, undrained

4 cups chicken broth

12 oz penne pasta

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup fresh spinach

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced smoked sausage and sauté until browned, about 4-5 minutes.

    Stir in the diced onion, bell pepper, and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

      Add the undrained diced tomatoes, chicken broth, penne pasta, Italian seasoning, red pepper flakes (if using), salt, and pepper to the pot. Bring to a boil.

        Once boiling, reduce the heat to low, cover, and let simmer for about 10-12 minutes, stirring occasionally, until the pasta is cooked al dente.

          Stir in the fresh spinach and allow it to wilt, about 1-2 minutes.

            Remove the pot from heat and stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning if necessary.

              Serve hot, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
