12 oz penne pasta

1 lb smoked sausage, sliced

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 can (14.5 oz) diced tomatoes, with their juice

4 cups chicken broth

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

1 cup heavy cream

1 cup spinach leaves, roughly chopped

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Sauté the Sausage: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage and set aside.

    Cook the Vegetables: In the same pot, add the diced onion and red bell pepper. Sauté for about 3-4 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Return the sausage to the pot. Add the penne pasta, diced tomatoes (with juice), chicken broth, Italian seasoning, and red pepper flakes (if using). Stir everything to combine.

        Cook the Pasta: Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for about 15-20 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

          Add Cream and Spinach: Remove the pot from heat and stir in the heavy cream and chopped spinach. Adjust the seasoning with salt and pepper to taste. The heat from the pasta will wilt the spinach.

            Serve: Divide the pasta into bowls, garnish with chopped parsley and a generous sprinkle of grated Parmesan cheese. Enjoy your delicious one pot meal!
