1 tablespoon olive oil

1 pound Italian sausage (mild or spicy, casing removed)

1 medium onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for extra heat)

6 cups chicken broth

1 (14.5 oz) can diced tomatoes, undrained

1 package (9 oz) cheese tortellini (fresh or frozen)

2 cups fresh spinach

Salt and pepper to taste

Grated Parmesan cheese for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes).

    Once the sausage is browned, add the diced onion, garlic, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened.

      Stir in the dried oregano, dried basil, and red pepper flakes (if using) to bloom the spices for about 1 minute.

        Pour in the chicken broth and add the can of diced tomatoes with their juices. Bring the mixture to a gentle boil.

          Once boiling, reduce the heat to a simmer and add the tortellini. Cook according to the package instructions, usually about 3-5 minutes for fresh tortellini or 7-9 minutes for frozen.

            When the tortellini is tender, stir in the fresh spinach and let it wilt for about 1-2 minutes.

              Season the soup with salt and pepper to taste.

                Serve hot, garnished with a sprinkle of grated Parmesan cheese on top.
