12 oz (340g) penne pasta

1 lb (450g) Italian sausage (mild or spicy, your choice), casings removed

1 medium onion, diced

4 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

4 cups low-sodium chicken broth

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional, for heat)

1 cup heavy cream

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil or parsley for garnish

Instructions
 

Brown the Sausage: In a large pot or Dutch oven, over medium heat, add the Italian sausage. Break it up with a wooden spoon and cook until browned, about 5-7 minutes. Remove excess grease if necessary.

    Sauté the Aromatics: Add the diced onion to the pot and cook until it becomes translucent, about 3-4 minutes. Then add the minced garlic and cook for another minute until fragrant.

      Add Pasta and Liquid: Stir in the penne pasta, diced tomatoes (with juices), chicken broth, Italian seasoning, and crushed red pepper flakes (if using). Bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to a simmer and cover the pot. Cook for around 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

          Make It Cheesy: Lower the heat and stir in the heavy cream, mozzarella cheese, and Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
