1 lb ground beef (or ground turkey for a lighter option)

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced (red or green)

1 (10 oz) can diced tomatoes with green chilies

1 (10 oz) can enchilada sauce

2 cups beef broth

2 cups uncooked pasta (such as rotini or penne)

1 packet taco seasoning (about 1 oz)

1 cup frozen corn

1 cup shredded cheese (cheddar or Mexican blend)

2 tablespoons olive oil

Salt and pepper to taste

Chopped fresh cilantro or green onions for garnish

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 3-4 minutes until they are soft and fragrant.

    Add the minced garlic and continue to sauté for another minute until garlic is fragrant.

      Increase the heat to medium-high and add the ground beef. Cook, breaking it apart with a spoon, until browned and cooked through (about 5-7 minutes). Season with salt and pepper.

        Stir in the taco seasoning, diced tomatoes with green chilies, enchilada sauce, and beef broth. Mix well.

          Add the uncooked pasta and frozen corn to the pot. Stir to combine all ingredients evenly.

            Bring the mixture to a boil, then reduce heat to low and cover the pot. Let it simmer for 12-15 minutes, or until the pasta is cooked al dente, stirring occasionally to prevent sticking.

              Once the pasta is cooked, remove the pot from heat and mix in the shredded cheese until it’s melted and creamy.

                Taste and adjust seasoning if needed.

                  Serve warm, garnished with chopped fresh cilantro or green onions for an extra burst of flavor.
