1 pound large shrimp, peeled and deveined

1 cup orzo pasta

4 cups low-sodium chicken broth

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 cup baby spinach

3 cloves garlic, minced

1 teaspoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Juice of 1 lemon

Sauté Shrimp: In a large skillet, heat olive oil over medium heat. Add the shrimp and season with salt, pepper, and Italian seasoning. Cook for 2-3 minutes on each side until shrimp are pink and opaque. Remove shrimp from the skillet and set aside.

    Cook Garlic and Orzo: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Then, stir in the orzo and toast it for 1-2 minutes, stirring frequently.

      Add Broth and Simmer: Pour in the chicken broth and bring it to a boil. Reduce the heat to medium-low, cover, and let simmer for 10-12 minutes, or until the orzo is al dente and has absorbed most of the liquid, stirring occasionally.

        Incorporate Vegetables: Add in the halved cherry tomatoes and baby spinach, stirring until the spinach wilts, which should take about 2-3 minutes.

          Finish with Cheese and Shrimp: Lower the heat to low, add the cooked shrimp back into the skillet, and sprinkle in the Parmesan cheese. Stir gently until everything is well combined and creamy. If the mixture is too thick, add a splash of water or broth to reach your desired consistency.

            Add Lemon and Garnish: Squeeze fresh lemon juice over the dish, mix well, and garnish with fresh chopped parsley before serving.
