4 boneless, skinless chicken thighs

4 medium-sized potatoes, diced (Yukon Gold or red potatoes work best)

6 cloves of garlic, minced

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (oregano, basil, thyme mix)

1/2 teaspoon red pepper flakes (optional, for heat)

1/4 cup olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the diced potatoes with 2 tablespoons of olive oil, minced garlic, dried Italian herbs, red pepper flakes (if using), salt, and pepper. Toss until the potatoes are well-coated.

      Spread the potato mixture evenly on one side of a large, rimmed baking sheet.

        In the same bowl, add the chicken thighs and drizzle with the remaining olive oil. Sprinkle the grated Parmesan cheese over the chicken thighs, coating them evenly with the cheese, salt, and pepper.

          Place the chicken thighs on the other side of the baking sheet, next to the potatoes.

            Bake in the preheated oven for about 35-40 minutes, or until the chicken is the internal temperature reaches 165°F (75°C) and the potatoes are golden and tender.

              For a crispy finish, switch the oven to broil for the last 3-5 minutes, watching carefully to avoid burning.

                Remove from the oven and let rest for a few minutes. Garnish with fresh chopped parsley before serving.
