2 medium sweet potatoes, diced

4 chicken thighs (bone-in, skin-on for extra flavor)

1 red bell pepper, sliced

1 yellow onion, sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon cumin

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Preparation: Begin by gathering all your ingredients. Wash and dice the sweet potatoes, slice the bell pepper and onion, and mince the garlic.

    Season the Chicken: In a bowl, mix the paprika, cumin, oregano, salt, and pepper. Rub this mixture all over the chicken thighs, ensuring even coverage.

      Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the garlic, onion, and bell pepper, sautéing for about 3-4 minutes until the onion becomes translucent.

        Add Sweet Potatoes: Stir in the diced sweet potatoes and season with a little more salt and pepper. Cook for 5-7 minutes, stirring occasionally, until they start to soften.

          Cook Chicken: Push the vegetables to the sides of the skillet and add the seasoned chicken thighs skin-side down. Let them sear for about 5 minutes to get a nice golden color. Flip the chicken thighs, and reduce the heat to low.

            Cover and Simmer: Cover the skillet with a lid, allowing the chicken to cook through for about 20-25 minutes. The sweet potatoes should be tender and the chicken cooked to an internal temperature of 165°F (75°C).
