2 ribeye steaks (about 1 inch thick)

Salt and black pepper, to taste

2 tablespoons olive oil

1 cup heavy cream

1/2 cup Gorgonzola cheese, crumbled

1 teaspoon garlic powder

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)

1 tablespoon balsamic vinegar

Fresh parsley, chopped (for garnish)

Prepare the Steaks: Take the steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

    Sear the Steaks: In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, carefully place the steaks in the skillet. Cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired level of doneness. Remove the steaks from the pan and let them rest on a cutting board.

      Make the Gorgonzola Sauce: In the same skillet, reduce the heat to medium. Add the heavy cream, garlic powder, rosemary, and thyme. Stir the mixture while it comes to a gentle simmer. Allow it to cook for about 5 minutes, stirring frequently, until the sauce thickens.

        Add Cheese: Stir in the crumbled Gorgonzola cheese and balsamic vinegar into the sauce. Continue to stir until the cheese melts and the sauce is smooth. Taste and adjust seasoning if necessary.

          Plate the Dish: Slice the rested steaks against the grain and place them on plates. Pour the Gorgonzola sauce generously over the steaks.
