1 ½ cups rolled oats

1 cup all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon cinnamon

½ cup unsalted butter, softened

½ cup brown sugar, packed

¼ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup raisins

½ cup chopped walnuts or pecans (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

    In a medium bowl, combine the rolled oats, all-purpose flour, baking powder, baking soda, salt, and cinnamon. Mix well and set aside.

      In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

        Beat in the egg and vanilla extract until well combined.

          Gradually stir the dry ingredients into the wet mixture until just combined.

            Fold in the raisins and nuts if using, ensuring they are evenly distributed throughout the dough.

              Spread the dough evenly into the prepared baking pan, leveling the surface with a spatula.

                Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.

                  Remove from the oven and let the bars cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
