Start with 2 cups of fresh strawberries. Make sure they are ripe and sweet. Hull and slice them to release their juicy flavor. Fresh strawberries give the ice cream its bright color and taste. If you want a sweeter ice cream, use berries that are at peak ripeness.

Ingredients

2 cups fresh strawberries, hulled and sliced

1/2 cup granulated sugar (adjust according to sweetness of strawberries)

2 cups heavy whipping cream

1 (14 oz) can sweetened condensed milk

1 teaspoon vanilla extract

Pinch of salt

1/2 cup crushed graham crackers (optional, for texture)

Instructions

In a mixing bowl, combine the sliced strawberries and granulated sugar. Toss them gently to coat. Let the strawberries macerate for about 15-20 minutes, allowing them to release their juices.

In a large bowl, whip the heavy cream with an electric mixer on medium speed until stiff peaks form (this should take about 3-5 minutes).

In another bowl, combine the sweetened condensed milk, vanilla extract, and a pinch of salt. Fold the whipped cream into this mixture gently, making sure not to deflate the cream.

After that, add the macerated strawberries along with their juices to the whipped cream mixture. Gently fold them in to incorporate without breaking down the strawberries too much.

If using crushed graham crackers, fold them in at this stage for added texture.

Pour the mixture into a clean, airtight container. Smooth the top with a spatula and cover it with a lid or plastic wrap.

Freeze the ice cream for at least 4-6 hours, or until solid.

Once frozen, let the ice cream sit at room temperature for a few minutes before scooping to allow it to soften slightly for easier serving.

Prep Time: 20 mins | Total Time: 6 hrs (including freezing) | Servings: 8

                    - Presentation Tips: Scoop the ice cream into bowls or cones and top with fresh strawberry slices and additional crushed graham crackers for garnish. A sprig of mint can also elevate the presentation!
