1 ½ cups digestive biscuits, crushed

½ cup unsalted butter, melted

2 cups cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 ½ cups fresh strawberries, pureed

½ cup strawberries, sliced for garnish

Prepare the Crust: In a medium bowl, combine the crushed digestive biscuits and melted butter. Mix until the crumbs are well coated with butter. Press the mixture evenly into the bottom of 6 individual serving jars or a 9-inch springform pan to form the crust. Chill in the refrigerator for about 15 minutes.

    Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until well combined.
