Ingredients
  

1 cup almond flour

1/2 cup smooth peanut butter or almond butter

1/4 cup maple syrup

Zest of 1 large orange

1 tablespoon fresh orange juice

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 cup white chocolate chips (dairy-free if needed)

1 tablespoon coconut oil (for melting chocolate)

Optional: Shredded coconut or orange zest for rolling

Instructions
 

In a large mixing bowl, combine almond flour, peanut butter, maple syrup, orange zest, orange juice, vanilla extract, and salt.

    Mix well with a spatula or your hands until a thick dough forms. If it’s too crumbly, add a tiny bit more maple syrup or orange juice until it holds together.

      Scoop out small portions of the dough (about a tablespoon each) and roll them into balls using your hands. Place the rolled truffles on a parchment-lined baking sheet.

        In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

          Dip each truffle into the melted chocolate, using a fork to lift it out. Allow excess chocolate to drip off and return the truffle to the sheet.

            If desired, roll the coated truffles in shredded coconut or sprinkle with additional orange zest before the chocolate hardens.

              Once all truffles are coated and decorated, place them in the refrigerator for about 30 minutes to set.
