Ingredients

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

1/3 cup freshly squeezed orange juice

Zest of 1 large orange

1 teaspoon vanilla extract

1 tablespoon gelatin powder (unflavored)

2 tablespoons water

Instructions

Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are well coated and resemble wet sand. Press this mixture into the bottom of a 9-inch springform pan to form an even layer. Refrigerate while you prepare the filling.

Melt the Gelatin: In a small bowl, sprinkle the gelatin powder over 2 tablespoons of water. Let it sit for about 5 minutes until it blooms. After blooming, microwave it for about 10-15 seconds until it is completely dissolved. Set aside to cool slightly.

Make the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the powdered sugar and mix until well combined.

Add Flavor: Mix in the orange juice, orange zest, and vanilla extract. Stir until the mixture is fully incorporated.

Add Whipped Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no streaks remain.

Combine with Gelatin: Once the gelatin has cooled slightly, add it to the cheesecake filling and mix well to ensure everything is evenly combined.

Assemble Cheesecake: Pour the filling over the prepared crust in the springform pan. Smooth the top with a spatula to create an even layer.

Chill: Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow it to set completely.

Serve: Once set, remove the sides of the springform pan. Slice the cheesecake and serve chilled. A dollop of whipped cream and additional orange zest on top can be added for garnish if desired.

                    Prep Time: 20 minutes | Total Time: 4 hours + chilling | Servings: 8-10
