Ingredients

1 cup creamy peanut butter (natural, unsweetened)

1/2 cup honey or maple syrup

2 cups rolled oats

1 cup chocolate chips (semi-sweet or dark)

1/4 cup cocoa powder

1 teaspoon vanilla extract

A pinch of salt

Optional: 1/4 cup chopped nuts or shredded coconut for extra texture

Instructions

Prepare the Pan: Line an 8x8-inch square baking pan with parchment paper, leaving some overhang for easy removal later.

Mixing the Base: In a large bowl, combine the creamy peanut butter and honey (or maple syrup). Mix until smooth and well incorporated.

Add Dry Ingredients: Stir in the rolled oats, cocoa powder, vanilla extract, and a pinch of salt. If using, fold in the nuts or shredded coconut. Mix until all ingredients are well combined and the oats are fully coated.

Press into Pan: Transfer the mixture to the prepared baking pan. Use a spatula or your hands to firmly press the mixture down into an even layer. Ensure it's packed tightly for best results.

Melt the Chocolate: In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until completely smooth.

Top with Chocolate: Pour the melted chocolate over the pressed oat mixture in the pan. Use a spatula to spread it evenly.

Chill: Place the pan in the refrigerator for at least 2 hours (or until the chocolate is set).

Cut and Serve: Once chilled and firm, lift the bars out of the pan using the parchment paper overhang. Cut into squares or rectangles, depending on your preference.

Store: Keep the bars in an airtight container in the refrigerator for up to a week.
