1 pre-made buttery tart shell

2 oranges, zested and segmented

1 grapefruit, zested and segmented

1 lemon, zested and juiced

1 cup heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon gelatin powder

3 tablespoons water

Fresh mint leaves for garnish

Edible glitter (optional)

Start by preparing the gelatin. In a small bowl, combine the gelatin powder with water and let it sit for about 5 minutes until it blooms. Then, heat it gently in the microwave (or on the stovetop) until dissolved, making sure it doesn’t boil.
