1 cup orzo pasta

150g 'nduja (soft, spreadable Italian sausage)

2 cups vegetable broth (or chicken broth)

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup cherry tomatoes, halved

1/2 teaspoon red pepper flakes (optional for extra spice)

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Orzo: In a medium pot, bring the vegetable or chicken broth to a boil. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.

      Add Bell Pepper and Zucchini: Stir in the diced red bell pepper and zucchini, cooking for another 5 minutes until the vegetables soften.

        Incorporate 'Nduja: Add the 'nduja to the skillet and stir until it's fully melted and combined with the vegetables, creating a rich, flavorful base.

          Mix in Tomatoes and Spices: Add the halved cherry tomatoes, red pepper flakes (if using), smoked paprika, salt, and pepper to the mixture. Cook for an additional 3-4 minutes until the tomatoes soften.
