1 cup dried navy beans, soaked overnight

1 ham bone (or 2 cups diced ham)

1 large onion, chopped

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

6 cups chicken broth

1 bay leaf

1 teaspoon dried thyme

1/2 teaspoon black pepper

Salt to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Drain and rinse the soaked navy beans under cold water. Set aside.

    In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until softened.

      Add the minced garlic and sauté for an additional minute, until fragrant.

        Stir in the soaked navy beans, ham bone (or diced ham), chicken broth, bay leaf, dried thyme, and black pepper.

          Bring the mixture to a boil. Once boiling, reduce heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beans are tender and the ham flavor has infused the soup.

            If using a ham bone, carefully remove it from the soup after cooking. Strip off any remaining meat and chop it into bite-sized pieces. Return the meat to the soup.

              Season with salt to taste and discard the bay leaf before serving.

                Serve hot, garnished with freshly chopped parsley.
