500g mixed mushrooms (shiitake, cremini, and oyster), sliced

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon thyme

1 teaspoon rosemary

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat.

    Add the finely chopped onion and sauté until translucent, about 5 minutes.

      Stir in the minced garlic and cook for an additional 1-2 minutes, making sure not to burn it.

        Add the sliced mushrooms to the pot and cook, stirring occasionally, until they release their moisture and begin to brown, about 8-10 minutes.

          Sprinkle the thyme and rosemary over the mushrooms, then pour in the vegetable broth. Bring the mixture to a gentle boil.

            Once boiling, reduce the heat to low and let it simmer for 15 minutes to allow the flavors to meld.

              Remove the pot from heat and use an immersion blender to purée the soup until smooth. (Alternatively, you can transfer the mixture to a blender in batches.)

                Return the soup to the pot, stir in the heavy cream, and season with salt and pepper to taste. Warm the soup gently over low heat, without bringing it to a boil.

                  Serve hot, garnished with freshly chopped parsley for a burst of freshness.
