12 lasagna noodles

2 tablespoons olive oil

1 onion, finely chopped

3 cloves garlic, minced

16 oz (450g) mixed mushrooms (cremini, shiitake, and portobello), sliced

2 cups spinach, fresh

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

2 cups ricotta cheese

1 egg

3 cups marinara sauce

2 cups mozzarella cheese, shredded

½ cup Parmesan cheese, grated

Fresh basil leaves for garnish

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the lasagna noodles according to package instructions. Drain and set aside.

      In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

        Add the minced garlic and sliced mushrooms. Sauté until the mushrooms are brown and tender, about 5-7 minutes. Stir in the spinach, thyme, oregano, salt, and pepper. Cook until spinach wilts, about 2 minutes. Remove from heat and let cool slightly.

          In a separate bowl, combine the ricotta cheese, egg, and a pinch of salt and pepper. Mix well.

            Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.

              Layer 4 lasagna noodles over the sauce. Spread one-third of the ricotta mixture over the noodles, followed by one-third of the mushroom-spinach mixture. Add one-third of the marinara sauce and a sprinkle of mozzarella on top.

                Repeat the layering process (noodles, ricotta, mushrooms, marinara, mozzarella) two more times, finishing with a final layer of noodles topped with the remaining marinara sauce and mozzarella.

                  Sprinkle the grated Parmesan cheese on top.

                    Cover the baking dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray) and bake in the preheated oven for 25 minutes.

                      Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                        Once done, let the lasagna cool for 10 minutes before serving. Garnish with fresh basil leaves just before serving.
