500g boneless chicken thighs, cut into bite-sized pieces

300g mixed mushrooms (shiitake, cremini, and button), sliced

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup chicken broth

2 tablespoons soy sauce

1 tablespoon balsamic vinegar

1 teaspoon dried thyme

1 teaspoon smoked paprika

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken pieces with salt, pepper, smoked paprika, and thyme. Set aside to marinate for about 15 minutes.

    Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Cook the Chicken: Increase the heat to medium-high, add the marinated chicken pieces to the skillet, and cook until browned on all sides, about 5-7 minutes.

        Add the Mushrooms: Stir in the sliced mushrooms and cook until they release their moisture and start to brown, approximately 4-5 minutes.

          Build the Sauce: Pour in the chicken broth, soy sauce, and balsamic vinegar. Stir well to combine, scraping any bits off the bottom of the skillet. Bring the mixture to a simmer.

            Simmer the Dish: Reduce the heat to low and allow the dish to simmer for 10-15 minutes, until the chicken is cooked through and the sauce has slightly thickened. Adjust seasoning with salt and pepper as needed.

              Garnish and Serve: Once cooked, remove from heat. Garnish with freshly chopped parsley before serving.
