1 ½ cups warm water (110°F to 115°F)

1 packet (2 ¼ tsp) active dry yeast

1 tbsp granulated sugar

4 cups all-purpose flour

½ cup baking soda (for the boiling solution)

1 egg (beaten, for egg wash)

Coarse sea salt (for sprinkling)

8 oz fresh mozzarella cheese (cut into small cubes)

4 tbsp unsalted butter (melted)

1 tsp garlic powder (optional)

1 tsp onion powder (optional)

Instructions
 

Activate Yeast: In a mixing bowl, combine warm water, yeast, and sugar. Stir gently and let it sit for about 5 minutes until frothy.

    Make Dough: In a large bowl, add the flour. Pour in the activated yeast mixture and mix until a dough forms. Knead for about 5-7 minutes on a floured surface until the dough is smooth and elastic.

      First Rise: Place the dough in a greased bowl, cover with a damp cloth, and allow it to rise in a warm place for about 1 hour, or until it doubles in size.

        Prepare Cheese: While the dough is rising, cut fresh mozzarella into small cubes. Set aside.

          Prepare Boiling Solution: In a large pot, bring about 8 cups of water to a boil. Carefully add the baking soda (it will bubble) and reduce heat to keep it simmering.

            Shape Pretzels: Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches). Place a cheese cube in the center and fold the dough over to encase the cheese, pinching the seams to seal.

              Twist and Boil: Shape each stuffed piece into a pretzel by twisting the ends. Carefully place each pretzel in the simmering water for about 30 seconds, then remove with a slotted spoon and place on a baking sheet lined with parchment paper.

                Egg Wash and Season: Brush each pretzel with the beaten egg and sprinkle with coarse sea salt. For extra flavor, you can sprinkle garlic powder and onion powder on top.

                  Bake: Preheat the oven to 425°F (220°C). Bake the pretzels for 12-15 minutes or until golden brown.
