For the crust:

1 ½ cups chocolate cookie crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the cheesecake filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs, room temperature

1 cup creamy peanut butter

1 cup sour cream

For the peanut butter cup topping:

12 mini Reese's Peanut Butter Cups, chopped

½ cup chocolate chips

½ cup heavy cream

Instructions
 

Make the Crust:

    - Preheat your oven to 325°F (163°C). In a mixing bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar. Stir until all the crumbs are well coated and the mixture resembles wet sand.

      - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and set aside to cool.

        Prepare the Cheesecake Filling:

          - In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar and vanilla extract, mixing well.

            - Add the eggs one at a time, mixing just until incorporated after each addition. Avoid overmixing.

              - Carefully fold in the creamy peanut butter and sour cream until everything is just combined.

                Assemble the Cheesecake:

                  - Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula. Tap the pan gently on the counter to help remove any air bubbles.

                    - Bake in the preheated oven for 50-60 minutes, or until the edges are set, but the center still has a slight jiggle. Turn off the oven and leave the cheesecake in there with the door ajar for 1 hour to cool slowly.

                      Prepare the Topping:

                        - In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from the heat and add the chocolate chips, stirring until smooth and melted. Let this ganache cool slightly.

                          - Once the cheesecake has cooled completely, pour the chocolate ganache over the top. Sprinkle the chopped Reese's Peanut Butter Cups on top of the ganache.

                            Chill the Cheesecake:

                              - Refrigerate the cheesecake for at least 4 hours (or overnight) to allow it to set properly.

                                Serve:

                                  - Once set, carefully remove the cheesecake from the springform pan. Slice into wedges and serve chilled. Optionally, drizzle with additional chocolate or peanut butter sauce before serving.
