4 large carrots, peeled and grated

1/2 cup raisins, soaked in warm water for 10 minutes

1/4 cup fresh parsley, finely chopped

1/4 cup fresh mint, finely chopped

1/4 cup almonds, roughly chopped

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon ground cumin

1 teaspoon ground cinnamon

Salt and pepper to taste

Instructions
 

Begin by soaking the raisins in warm water for about 10 minutes. This will soften them and enhance their natural sweetness. Drain and set aside.

    In a large mixing bowl, add the grated carrots.
