Ingredients

8 oz spaghetti

2 cups cooked chicken, shredded (preferably rotisserie)

1 cup Monterey Jack cheese, shredded

1 cup sharp cheddar cheese, shredded

1 can (10 oz) diced tomatoes with green chilies

1 cup ranch dressing

1/2 cup green onions, sliced

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Instructions

Preheat the oven to 350°F (175°C).

Cook the spaghetti according to package instructions until al dente. Drain and set aside.

In a large mixing bowl, combine the shredded chicken, cooked spaghetti, diced tomatoes (with juice), ranch dressing, garlic powder, onion powder, paprika, and half of both Monterey Jack and cheddar cheese. Stir until well combined.

Season the mixture with salt and pepper to taste. Add in the sliced green onions and mix again.

Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.

Top with the remaining Monterey Jack and cheddar cheese.

Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.

Remove from the oven and let it cool for 5-10 minutes before serving. Optionally, garnish with fresh cilantro to add a pop of color.
