Ingredients
  

12 small baby potatoes

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon bits

1/4 cup sour cream

2 green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon paprika

Olive oil for brushing

Salt and pepper to taste

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash the baby potatoes thoroughly and dry them with a kitchen towel.

      Using a fork, poke a few holes into each potato to allow steam to escape.

        Brush the potatoes with olive oil and sprinkle with salt and pepper.

          Place the potatoes directly on the oven rack and bake for 25-30 minutes, or until tender and easily pierced with a fork.

            Once done, let the potatoes cool slightly. Then, slice each potato in half lengthwise.

              Carefully scoop out a small portion of the flesh, leaving enough to keep the skins intact.

                In a bowl, combine the scooped potato flesh with shredded cheddar cheese, cooked bacon bits, garlic powder, and paprika. Mix well.

                  Spoon the mixture back into the potato skins and place them on a baking sheet.

                    Bake the stuffed potato skins for an additional 10 minutes at 400°F (200°C) until the cheese is melted and bubbly.

                      Remove from the oven and let cool for a minute. Top each mini skin with a dollop of sour cream and a sprinkle of chopped green onions.

                        Serve warm and enjoy the delightful explosion of flavors!
