Mini Big Mac Cheeseburgers

For the Burgers:
1 lb ground beef (80/20)
1 tsp salt
1/2 tsp black pepper
8 mini burger buns
8 slices American cheese
For the Special Sauce:
1/4 cup mayonnaise
2 tbsp ketchup
1 tbsp yellow mustard
1 tbsp sweet relish
1 tsp white vinegar
1/2 tsp garlic powder
1/2 tsp onion powder
Salt to taste
Additional Toppings:
Shredded lettuce
Sliced pickles
Chopped onions
- In a small bowl, combine mayonnaise, ketchup, yellow mustard, sweet relish, white vinegar, garlic powder, onion powder, and salt. Mix well until smooth. Adjust seasoning to taste and set aside.
- In a mixing bowl, combine the ground beef with salt and black pepper. Gently mix and form into 8 small, perfectly shaped patties.
- Preheat a grill or skillet over medium-high heat. Cook the patties for about 3 minutes on each side for medium-rare, placing a slice of American cheese on top of each patty during the last minute of cooking to melt it.
- While the burgers are cooking, split the mini buns and place them on the grill or in a toaster until lightly golden.
Assemble the Cheeseburgers:
- Spread a layer of the special sauce on the bottom half of each bun. Add a cheeseburger patty, followed by a sprinkle of shredded lettuce, a couple of pickle slices, and some chopped onions. Top with the other half of the bun.
- Arrange the mini Big Mac cheeseburgers on a serving platter and serve immediately with extra special sauce on the side for dipping.
