Mini Baked Potatoes

Ingredients
  

20 small baby potatoes

4 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or your choice)

½ cup sour cream

2 green onions, chopped

Fresh herbs (such as parsley or chives) for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash the baby potatoes thoroughly and dry them with a towel.

      In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until they are evenly coated.

        Spread the potatoes out in a single layer on a baking sheet lined with parchment paper.

          Bake for 25-30 minutes, or until the potatoes are tender and the skins are crispy. You can check for doneness by inserting a fork—they should be easily pierced.

            Remove from the oven and let them cool slightly. Using a fork, gently press down on each potato to create a cute ‘smash’ effect without breaking them apart completely.

              Sprinkle shredded cheese generously over the top of each potato and return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                Remove from the oven and let cool for a minute. Top each potato with a dollop of sour cream and a sprinkle of chopped green onions and fresh herbs.

                  Serve warm and enjoy your delicious crispy mini baked potatoes!
