2 large Granny Smith apples, peeled and diced

1 teaspoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 cup brown sugar

1 tablespoon cornstarch

1 tablespoon unsalted butter, melted

1 package pre-made pie crust (or homemade if preferred)

1 egg (for egg wash)

1 tablespoon sugar (for sprinkling)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a medium bowl, combine the diced apples with lemon juice, cinnamon, nutmeg, brown sugar, and cornstarch. Mix well and set aside to let the flavors meld.

      Roll out the pie crust on a lightly floured surface and cut out 4-5 inch circles using a cookie cutter or a large glass.

        Place the crust circles in a muffin tin, pressing down gently to create a small cup shape.

          Fill each crust with a generous spoonful of the apple mixture, making sure not to overfill.

            Drizzle a little melted butter over the top of the apple filling for added richness.

              Cut small strips of leftover pie crust to make a lattice top, or simply leave them open-faced if you prefer.

                Beat the egg in a small bowl and brush the mixture over the crusts for a golden finish. Sprinkle a little sugar on top for added sweetness and crunch.

                  Bake in the preheated oven for 20-25 minutes or until the crust is golden brown and the filling is bubbling.

                    Allow the mini apple pies to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
