1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 zucchini, diced

1 yellow bell pepper, chopped

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14 oz) diced tomatoes (with juice)

6 cups vegetable broth

1 can (15 oz) cannellini beans, rinsed and drained

1 cup small pasta (like ditalini or elbow)

2 cups fresh spinach

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley and grated Parmesan cheese for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced carrots, celery, zucchini, and bell pepper to the pot. Sauté for 5-7 minutes until the vegetables start to soften.

        Incorporate the green beans, diced tomatoes (with juice), vegetable broth, cannellini beans, oregano, and basil into the pot. Bring the mixture to a boil.

          Once boiling, reduce the heat to low and let it simmer for about 15 minutes to allow the flavors to meld.

            Stir in the small pasta and cook for an additional 8-10 minutes, or until the pasta is al dente.

              Remove the pot from heat and fold in the fresh spinach until wilted.

                Season the soup with salt and pepper to taste.
