1/4 cup milk

1/2 cup diced bell peppers (mixed colors)

1/4 cup diced red onion

1/4 cup fresh corn (cooked or canned)

1/2 cup diced tomatoes

1/4 cup black beans, rinsed and drained

1/2 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper to taste

1/2 cup shredded cheddar cheese

2 tablespoons chopped fresh cilantro

1 tablespoon olive oil

Avocado slices and salsa for topping

Instructions
 

In a mixing bowl, whisk together the eggs and milk until well combined. Season with salt, pepper, cumin, and chili powder.

    Heat olive oil in a non-stick skillet over medium heat. Add the diced red onion and bell peppers, sautéing for 3-4 minutes until softened.

      Stir in the fresh corn, diced tomatoes, and black beans. Cook for an additional 2 minutes until heated through.

        Pour the egg mixture into the skillet, spreading it evenly over the sautéed vegetables. Cook undisturbed for 3-5 minutes or until the edges begin to set.

          Gently lift the edges of the omelette with a spatula while tilting the skillet to allow uncooked egg to flow to the edges. Continue cooking until the omelette is mostly set but still slightly runny on top.

            Sprinkle the shredded cheddar cheese and chopped cilantro over one half of the omelette. Carefully fold the other half over the cheese.

              Let cook for 1 more minute to allow the cheese to melt fully. Slide the omelette onto a plate.
