Mexican Beef Enchiladas

Ingredients
  

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (10 oz) enchilada sauce (red or green, your choice)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (canned or frozen)

2 cups shredded cheese (cheddar or a Mexican blend)

8 corn tortillas

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

Fresh cilantro, for garnish

Sour cream, for serving (optional)

Instructions
 

Preheat Oven: Start by preheating your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onions are translucent, about 7-10 minutes. Drain excess fat.

      Add Spices and Beans: Stir in the ground cumin, chili powder, salt, and pepper. Then add the black beans and corn to the skillet. Mix well and allow heating through for about 3-5 minutes.

        Prepare tortillas: In a separate skillet, lightly heat the corn tortillas (about 15-30 seconds per side) until they are pliable. This makes rolling them easier.

          Assemble Enchiladas: Spread a thin layer of enchilada sauce in a 9x13 baking dish. Take one tortilla, fill it with a generous scoop of the beef mixture, top it with a sprinkle of cheese, and roll it up tightly. Place seam-side down in the baking dish. Repeat with remaining tortillas.

            Cover and Bake: Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top, making sure to cover them evenly. Sprinkle any remaining cheese on top.

              Bake: Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

                Serve: Let the enchiladas cool for a few minutes before serving. Garnish with fresh cilantro and serve with sour cream, if desired.
