Ingredients

1 lb ground chicken

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1/2 cup diced onions

3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 large egg

1/4 cup milk

1 teaspoon dried Italian herbs

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/2 cup marinara sauce (for topping)

Instructions

Preheat your oven: Set the oven to 350°F (175°C) to preheat as you prepare the meatloaf mixture.

Sauté the onions: In a small pan, sauté the diced onions in a splash of olive oil over medium heat until they become translucent (about 3-4 minutes). Add the minced garlic and cook for an additional minute until fragrant. Remove from heat and allow to cool slightly.

Combine ingredients: In a large bowl, mix together the ground chicken, breadcrumbs, grated Parmesan cheese, sautéed onions and garlic, parsley, egg, milk, Italian herbs, salt, black pepper, and red pepper flakes. Use your hands or a spatula to combine until just mixed (do not overwork it).

Shape the meatloaf: Transfer the mixture to a lightly greased loaf pan and shape into a loaf. Smooth the top to ensure even cooking.

Add marinara sauce: Pour the marinara sauce over the top of the meatloaf, spreading it evenly with a spatula.

Bake the meatloaf: Place the loaf pan in the preheated oven and bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).

Rest and serve: Remove from the oven and let the meatloaf rest for about 10 minutes before slicing. This helps the juices redistribute and keeps it moist.

                - Prep Time: 15 minutes | Total Time: 1 hour | Servings: 6

Presentation Tips: Slice the meatloaf and serve it on a platter, drizzled with extra marinara sauce and sprinkled with fresh parsley for garnish. Consider pairing it with creamy mashed potatoes and steamed green beans for a complete meal.
