4 fillets of white fish (such as cod, tilapia, or haddock)

2 tablespoons olive oil

1 lemon, thinly sliced

1 cup cherry tomatoes, halved

1 red bell pepper, sliced

1 small red onion, sliced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped for garnish

Optional: 1 teaspoon capers for an extra zing

Instructions
 

Preheat the oven to 400°F (200°C).

    In a large baking dish, arrange the white fish fillets side by side.

      Drizzle the olive oil over the fish, ensuring each fillet is well coated.

        Scatter the minced garlic, sliced lemon, cherry tomatoes, bell pepper, and red onion evenly over the fish.

          Sprinkle the dried oregano, thyme, salt, and pepper over the top. If using capers, add them now for a burst of flavor.

            Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

              After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the fish is cooked through and flakes easily with a fork.

                Remove from the oven, and sprinkle with chopped fresh parsley for garnish before serving.
