4 cod fillets (about 6 oz each)

3 tablespoons olive oil

1 lemon, zested and juiced

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

½ cup Kalamata olives, pitted and halved

¼ cup fresh parsley, chopped

2 tablespoons capers, rinsed and drained

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper for easy cleanup.

    In a small mixing bowl, combine olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, red pepper flakes, salt, and pepper. Whisk until well mixed.

      Place the cod fillets in the prepared baking dish and generously brush both sides of each fillet with the olive oil mixture.

        Scatter the halved cherry tomatoes and Kalamata olives around the cod in the baking dish.

          Sprinkle the capers over the top, adding a salty burst of flavor.

            Bake in the preheated oven for approximately 15-20 minutes, or until the cod is flaky and cooked through (internal temperature should be 145°F/63°C).

              Remove from the oven and garnish with freshly chopped parsley before serving.
