4 slices of whole grain bread

1 cup fresh spinach, roughly chopped

1/2 cup feta cheese, crumbled

1/2 cup shredded mozzarella cheese

1 small tomato, thinly sliced

1/4 cup Kalamata olives, pitted and sliced

2 tablespoons sun-dried tomatoes, chopped

1 tablespoon olive oil

1 clove garlic, minced

Salt and pepper to taste

Optional: 1 teaspoon dried oregano

Instructions
 

In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1-2 minutes or until garlic is fragrant.

    Add the chopped spinach to the skillet and cook for 2-3 minutes, stirring frequently until wilted. Season with salt, pepper, and dried oregano if using. Remove from heat and let cool slightly.

      In a mixing bowl, combine the sautéed spinach, crumbled feta cheese, shredded mozzarella, sliced Kalamata olives, and chopped sun-dried tomatoes. Mix until well combined.

        Heat a clean skillet or griddle over medium heat. While it heats, spread a thin layer of olive oil or butter on one side of each slice of bread.

          Place two slices of bread on the skillet, oil/butter side down. Spread half of the spinach and cheese mixture evenly over each slice. Top with thin tomato slices.

            Place the remaining slices of bread on top, oil/butter side up, and grill for about 3-4 minutes or until the bread is golden brown.

              Carefully flip the sandwiches and grill the other side for another 3-4 minutes, ensuring the cheese is melted and the bread is crispy.

                Once cooked, remove from the skillet and let cool for a minute before slicing in half.
